A 130m² retail space  of a listed building was to be converted into a Bakery and Cafe.

The task comprised a production area with cooling chambers and furnaces, and a salesroom and cafe.

The basic design strategy for the, cafe and shop was to create a flexible stage-like situation, with various components (breadshelves, containers, tables) which „could be wheeled into different spacial layouts“.

This facilitates different uses of the space, e.g. public  tastings, workshops and the hosting of events.
